This is ment as a collection of my alt recipes.

Brioche

Somewhat misinterpreted brioche version ;)

Program 5, set to 750gr bread;

  1. add 200ml water (milk for even better flavor, or add ~15grams of milk powder)
  2. add 40gr butter (melt it before adding!)
  3. add 1 egg
  4. add 1 egg yolk
  5. add 5 grams salt
  6. add 60 grams sugar
  7. add 400 grams flour
  8. add 4 grams dry active yeast

Put on dark , 03h26m , brush remainder of the second egg on top in the last 30 minutes or so.

Pizza Dough

Program 10, 1000gr

  1. add 310ml water (warm! ~27C)
  2. add 56 grams oil
  3. add 6 grams salt
  4. add 5 grams sugar
  5. add 560 grams flour
  6. add 3 grams dry active yeast

Normal Cake

Pound cake or butter cake.

Program 12

  1. add 3 eggs
  2. add 150 grams butter
  3. add 150 grams sugar
  4. add 150 grams flour
  5. add 3 grams baking powder

Cranberry Walnut & Rosemary bread

Program 1, 1000gr

  1. add 300ml water
  2. add 30ml sunflower oil
  3. add 30ml honey
  4. add 8.5 grams salt
  5. add 250 grams wholemeal bread flour (volkorenbloem)
  6. add 250 grams white bread flour (patentbloem)
  7. add 6 grams of dry active yeast
  8. add 5 grams of rosemary sprigs
  9. add 75 grams of dried cranberries
  10. add 75 grams of crushed walnut bits (dont put whole ones inside!)

Last 3 steps are probably best to be done after the 'halfway beep' before second kneading.

Pasta Dough

Program 10, 1000gr

  1. add 30ml oil
  2. add 3 large eggs
  3. add 3 grams salt
  4. add 300 grams semolina (griesmeel)
